There is not really a defined number that I know of however there is a limit as to how long they can remain deferred. Deferral authorization is often conditional based upon the proper operation of redundant systems, so while each system or component individually may be deferred both or often two out of three are not.
So as the deferrals add up they run out of options should other things fail. Pilots can be a great help to mechanics by simply reporting every anomaly they observe, then letting maintenance figure out what caused it,or in NWAs case now-not.
After a while the MELs add up and some run out of time, once they do, the plane is grounded. More than likely thats when serious pencil whipping starts.
