Apple Chips

Does anyone know if a brisket smoked with apple chips is any good or not? I was also wondering if the flavour should be offset with oak chips?

Since the barbeque will be pulled out of the snowbank soon, it's time we started thinking of that season once again.

Apple will be fine. If you're going to offset, use maple or hickory. Apple works best with pork, but is also nice with cow. DO NOT use mesquite - much too acrid for smoking.
