Since the barbeque will be pulled out of the snowbank soon, it's time we started thinking of that season once again.

C CTD Veteran Mar 10, 2003 630 0 Feb 17, 2004 #2 Apple will be fine. If you're going to offset, use maple or hickory. Apple works best with pork, but is also nice with cow. DO NOT use mesquite - much too acrid for smoking. How do you prep your brisket? Ahhhh, smoking season is soon upon us...
