Contracted, mostly. I believe that LAX does their own catering, however. Don't quote me. Someone correct me if I am wrong.

I am 99.9% sure it is entirely contracted. Tha main contractor is LSG Skychefs, with secondary caterers in cities where LSG doesn't operate.

Does Sacramento still do their own or has that been contracted out?

Lots of the short and med haul field stations do their own, as it is usually just ice and trash.
I recently had a SMF turn, and they only did ice and trash.
Any time a catering truck is used to swap out carts, it will be contract.

That makes sense that it is now just ice and trash. When HP was flying the SNA-SMF route they would put on a new cart in SMF for the trip to SNA.
